Potato Chip Chocolate Chip Cookies

There was one cookie that I gave on my cookie platters this past Christmas that I didn't get a chance to post before Christmas. They are a simple cookie to make, and they aren't Christmasy; so you can make then year round.


Potato Chip Chocolate Chip Cookies

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt (I used Kosher)
1 cup butter (I used unsalted)
3/4 cup granulated sugar
3/4 cup brown sugar (I used light)
2 teaspoons vanilla (DIY Vanilla Extract)
2 eggs
2 cups crushed Wavy Lays Potato Chips
1/2 cup Wavy Lays Potato Chips for tops of cookies
2 cups mini chocolate chips

1. Preheat oven to 350 degrees.
2. Cream the butter, sugars, and vanilla together.
3. Mix in flour, baking soda, and salt.
4. Mix in one egg at a time.
5. Stir in chocolate chips, and crushed potato chips.
6. Place a scoop of dough (about 2 tablespoons) on a parchment lined baking sheet.
7. Push a potato chip into the top of each cookie.
8. Bake for 10-12 minutes.

My husband liked these cookies just the way they are, but I think the next time I make them I will try milk chocolate chips instead of semi-sweet.

Top 10 Posts From 2012



2012 brought many good changes for my family. My daughter started full-day kindergarten, my son started preschool, both my kids started karate, my husband started a new job, I started volunteering at my daughter's school, and I started this blog. 2012 has totally changed the way we do things around our home, and the amount of time we get to speed together, but overall the changes have been good.

Of course along with the good there was plenty of bad, but I have to say I wouldn't change a thing. I actually feel grateful for both the good and the bad, because I learned many lessons. I've learned to appreciate the little things in life, that I am a stronger person than I thought I was, and perhaps most importantly a little more patience along the way.

I am very happy that I started this blog for the many reasons, but especially because it has helped me try new things, introduced me to new friends, and helped some of you try something new too. 
































I would also like to share my favorite post of the 2012.

In this post I show how I made a piece of wall art that hangs in our family room. It is one of my favorite things in our home because it describes us perfectly.
